8 Eateries to Check Out at Longmont’s New Parkway Food Hall

Longmont officially has its first food hall.

 

Parkway Food Hall opened its doors last week at the corner of Ken Pratt Boulevard and Main Street—or “Main and Main,” as Chris Nehls likes to call it.

Nehls is vice president of Actis, the company that has owned Longmont’s Parkway Promenade for more than 30 years. He was instrumental in bringing the food hall to life, along with Pat Garza of National Food Hall Solutions, which is the operating partner on the project.

 

The 16,000-square-foot space has eight food stalls, plus a full-service bar serving beer, wine and cocktails. Parkways also has event space for up to 40 people, a spacious patio and an arcade. A coffee shop is slated to open soon.

“As we got to know more about the food hall business, we really fell in love with what it is—and, specifically, the breadth you can achieve at a food hall,” says Nehls. “Because you really can be something for everyone. It’s unlike a normal restaurant, where you have to pick your lane and stay in it.”

 

Boulder has two official food halls, Avanti Food and Beverage and Rosetta Hall, plus a third unofficial food hall if you count Rayback Collective. But Parkway is the first to open in Longmont.

Meridian 105 Architecture designed the space—which once housed Lucky’s Market and Alfalfa’s Market—and Longmont’s Faurot Construction led the build-out.

 

“We’re excited to bring this new destination to Longmont residents and visitors,” says Garza. “We’re thrilled to help eight local chefs and restaurateurs achieve success, whether it’s through testing a new concept, creating their first brick-and-mortar following food truck success, or setting up a second, third or fourth location. Things are tough for restaurateurs these days, but we’re living in a new era where the more expensive traditional brick-and-mortar restaurants aren’t the only route to success for chefs.”

Chile con Quesadilla

Chile con Quesadilla is an award-winning food truck that won Top Taco Denver in 2021 and 2022, plus a slew of other accolades. The company, which is owned by Christina and Chris Richardson, also has a brick-and-mortar restaurant in Brighton. Chile con Quesadilla’s menu includes tacos, quesadillas, bowls and nachos, as well as sides like chile cheese fries and Mexican street corn.

 

Spice Fusion

Can’t make up your mind for dinner? Head to Spice Fusion, which has a menu full of Thai entrees (like pad thai) and a menu full of Indian dishes (like tikka masala). It’s a new concept from the owners of Gurkhas on University Hill.

 

Pie Dog Pizza

You likely already know (and love) Patrick and Lisa Balcom, the husband-and-wife duo behind Niwot’s Farow restaurant. A year and a half ago, they launched Pie Dog Pizza, a new concept available for pick-up and delivery only. Now, they’re giving their delicious Neapolitan-New York-style pizzas a homebase at Parkway.

Baa Haachi

The Balcoms are also using Parkway as an opportunity to experiment with a new concept called Baa Haachi. It’s a casual, Japanese street food restaurant led by chef Adam Chan. Dishes include miso-glazed salmon, ramen, cucumber and daikon salad, sushi bowls and more.

H3ersh3r is a Denver-based barbecue food truck and catering company created by chef Jeff Gebott. Think: melt-in-your-mouth ribs, pulled pork sandwiches, chicken wings and other savory favorites.

Sometimes, you just need a big juicy burger and a milkshake. This comfort food—and more—is on the menu at Cleaver & Co, which also has a stall at Junction Food & Drink in Denver.

Wherever you choose to eat, be sure to save room for dessert! HipPOPS is a bit like a choose-your-own-adventure book, with gelato popsicles. First, choose your flavor of gelato (from a list that includes coconut, cappuccino and cherry chocolate, among others). Then, choose your dip—things like milk or white chocolate. Finally, choose your topping—options include salted pistachios, shredded coconut, caramelized hazelnuts and more.
