Diners have a new perch for enjoying city views and Colorado’s famous orange and pink sunsets. Cimera, the city’s newest rooftop restaurant and cocktail bar, has officially opened atop The Source Hotel + Market Hall in RiNo, bringing the dynamic flavors of Latin America to one of Denver’s most beloved destinations.
Helmed by Peruvian chef Diego Muñoz, Cimera offers an elevated Pan-Latin dining experience that takes guests from Mexico to Central America to South America—all without ever leaving Denver.

The concept comes from Tom Dillon, the founder of Apicii, a hospitality group that operates a portfolio of restaurants, private clubs, bars, cafés, event spaces and entertainment venues across the nation. With Cimera, the team is bringing together world-class hospitality, globally inspired cuisine and locally sourced ingredients.
“There’s nothing quite like Cimera in Denver, where guests can enjoy exceptional food and cocktails in a design-forward rooftop gathering space, set against the Denver skyline and the Rocky Mountains,” says Dillon.

The Menu: Latin Soul, Local Heart

In the kitchen, Muñoz is teaming up with executive chef Geoff Cox, who most recently worked at Hop Alley. Together, they’ve developed a menu featuring locally sourced ingredients like mushrooms from Cannolo Farms, tortillas and masa from Don Zorros Molino and bass from sustainable fisheries in Alamosa, Colorado.
“Chef Muñoz’s expertise in Latin and Peruvian cuisine, paired with chef Geoff’s deep connection to Denver, creates a distinctive culinary experience, further adding to The Source Hotel + Market Hall,” says Dillon.

Cimera’s menu celebrates the diversity and depth of Latin cooking through dishes designed to share. Diners will find reimagined versions of traditional favorites alongside inventive new pairings.
Highlights include tuna tiradito with soy chili sauce, cucumber, and toasted peanut, alongside octopus carpaccio with avocado cream, olive vinaigrette, roasted peppers and breadcrumbs.

The pork belly anticucho skewers have an irresistible Nikkei glaze and scallion dressing, while the ribeye with roasted onions and aji-amarillo béarnaise offers a refined twist on steakhouse fare. Comfort-seekers will find plenty to love in the Papa Rellena, a potato croquette stuffed with braised beef and rocoto emulsion.
Seafood, a cornerstone of Latin American cuisine, also takes center stage with the salmon adobado, which features a filet marinated in chili and miso and served with garlic eggplant Chifa-style.

Cocktails with Character

The cocktail program, curated by beverage director Adam Griggs, mirrors the menu’s vibrancy with a lineup of cocktails that both honor and elevate Latin classics.
There’s a frozen pisco punch blending pisco, pineapple, rose, lemon, lime, and angostura; a hibiscus margarita that’s as floral as it is tart; and an horchata cooler, which pairs rum and sherry with creamy rice milk, nutmeg and lime.

For those seeking something with a bit more edge, the smoked mole manhattan—made with rye, rum, sweet vermouth, mole and smoked tea—adds an earthy, complex finish to a timeless favorite.
Shared cocktails and punches, including a yerba mate punch with gin, mezcal, yerba mate, lemon, vanilla, cinnamon and coconut, invite guests to linger over long conversations as the sun dips behind the Rockies.

The offerings also include a wine list prioritizing Latin-focused selections.
Design Meets Altitude
Cimera’s atmosphere is as thoughtfully crafted as its menu. The rooftop space combines warm coral walls, wood and greenery touches and colorfully patterned banquettes and upholstery, creating an inviting contrast to the industrial backdrop of RiNo. A vibrant mural by artist Aaron Petz wraps around three walls of the dining room, depicting mountainside villages and colorful abodes—a visual love letter to community and creativity.

Retractable glass walls open the main dining space to the skyline, turning the restaurant into an open-air retreat when weather allows. A private dining room with a patio and two adjoining rooms is also available for gatherings and events.
A New Chapter for The Source
Joining acclaimed neighbors like Safta, Temaki Den and Reunion Bread, Cimera helps further The Source Hotel + Market Hall as one of Denver’s premier culinary destinations.

Cimera is now open for lunch, dinner and cocktails, with light bites available from 4-5 p.m. Reservations are encouraged, and walk-ins are welcome at the bar.
